I made this salsa over the weekend and it was a big hit! My dad said that I “hit it out of the park” so I know it has to be good!
This fresh, tangy salsa is so refreshing on hot summer days. I serve with chips as an appetizer and always make extra because it’s SO good on top of grilled salmon! I usually use the leftovers for dinner the next day.
My two secret ingredients are Tajín seasoning and pickled jalapeños! I use 2 small fresh peppers and chopped up a few from the jar. The combo is so good and adds the perfect amount of spice.

Salsa Ingredients
1 large mango (or two smaller ones), cut into medium sized cubes
1/2 of an English cucumber – diced
1 red bell pepper, diced
1/2 bunch of cilantro, diced
1 or 2 small fresh jalapeños (depending on how spicy you like it!), diced and seeds removed
4 or 5 pickled jalapeños (add more or less to taste), diced
1/2 a red onion, diced
Juice of 1 whole lime
Tajín seasoning
Sea salt
Salsa Instructions
Be sure to dice all ingredients pretty small except for the mangoes, which should be in medium sized cubes.
Combine all ingredients in a large bowl and squeeze lime juice over the top.
Add the Tajin and Sea Salt to taste (I usually do about a teaspoon of each).
Mix together and serve with chips or over grilled salmon.
