Since I’m almost four months postpartum, it’s time to get back on the low-carb wagon. My brother’s wedding is coming up in November, so I’m trying to eat healthy so that I look my best in the photos that will be around for all of eternity. So starting now, no more Chick-fil-A or late night hot fudge sundaes. I’m keeping my wine, though. No one can take that from me!!
I just made this recipe last week and it was a hit! It was not only both healthy and delicious, but it was pretty quick and easy to whip up! Scroll down for the recipe!
Ingredients + Instructions
Ingredients
2 Large green bell peppers, de seeded and chopped in half
1 lb. ground turkey
2 packets Sazón seasoning
1/2 onion (any color is fine… I used red), diced
2 small zucchini, chopped
2 cups of frozen cauliflower rice
1 can hatch enchilada sauce
1 can of black beans, rinsed
1/2 Carrot, shredded
1/2 C. of frozen corn or 1/2 can
Shredded Mexican cheese
1/2 bunch Chopped fresh cilantro
1/2 C. Grape tomatoes sliced in half
Fresh lime, cut into wedges
1/2 an Avocado, chopped
Instructions
- Preheat oven to 350°.
- Sauté chopped onion in a large pan or pot with a drizzle of olive oil over medium high heat until translucent.
- Add in ground turkey and brown. Add in both packets of Sazón and mix really well.
- Add cauliflower rice and corn and cook until no longer frozen.
- Add beans, shredded carrot, zucchini, and cook until zucchini is slightly soft, but not overcooked.
- Add enchilada sauce and mix well.
- Add half the turkey and veggie mixture to a casserole dish.
- Add 4 halves of the bell pepper on top of the turkey and veggie mixture in the casserole dish with the inside of the pepper facing up (pictured above).
- Add remaining turkey and veggie mixture on top of the peppers.
- Top with cheese and bake in oven until cheese is melted and starts to boil and peppers are cooked through, about 25 minutes.
- Remove from oven, garnish with chopped avocados, chopped cilantro and cherry tomatoes. *I also like to set out the garnishes in little ramekins so people can add them to their dish and because it looks pretty.*
- Serve with lime wedge and squeeze over the top of the dish before eating.
- Enjoy!
For my husband and almost two year old, who are happy carb-eaters, I serve over rice or with a side of warm tortillas. You can also sub out the ground turkey for beef and I think it would be just as great!
